Bread Fritters with Ketchup Recipe

 

Ingredients

 

Serve 4

  • 14 oz/400 g day­old bread, crumbled

  • 4 eggs

  • 1 cup/125 g freshly grated Pecorino cheese

  • 2 tbsp finely chopped parsley

  • salt and freshly ground black pepper to taste

  • 2 cups/500 ml olive oil, for frying

  • 1 cup/250 ml ketchup or tomato sauce

  • fresh basil


Method:

  1. Mix the bread, eggs, 1/2 cup (60 g) of Pecorino, and parsley in a large bowl. Season with salt and pepper.

  2. Shape the mixture into small fritters. Heat the oil in a large frying pan until very hot and fry the fritters in small batches for 5-7 minutes, or until browned.

  3. Remove with a slotted spoon and drain well on paper towels. Arrange the fritters on a heated serving dish.

  4. Heat the ketchup and pour it over the fritters. Sprinkle with the remaining Pecorino, sprinkle with the basil, and serve hot.
