Fritters with Ketchup Recipe
Ingredients

14 oz/400 g dayold
bread, crumbled
4 eggs
1 cup/125 g
freshly grated Pecorino cheese
2 tbsp finely chopped parsley
salt and freshly ground black pepper to taste
2 cups/500 ml olive oil, for frying
1 cup/250 ml ketchup or tomato sauce
fresh basil
Method:
Mix
the bread, eggs, 1/2
cup (60 g) of
Pecorino,
and parsley in a large bowl. Season with salt
and pepper.
Shape the mixture into small fritters.
Heat the oil in a large frying pan until very hot
and fry the fritters in small batches for 5-7
minutes, or
until browned.
Remove with a slotted spoon and
drain well on paper towels. Arrange the fritters on a heated serving dish.
Heat the ketchup and pour it over the fritters.
Sprinkle with the remaining Pecorino, sprinkle with
the basil, and serve hot.
