Warm Goat's
Cheese with Basil Recipe

1 large bunch fresh basil

1/2 cup/125 ml extra-virgin olive oil

8 oz/250 g mixed salad greens, well-washed
-
juice of 1 lemon
-
salt and freshly ground black pepper to taste

4 small rounds of goats cheese
-
4 slices firm-textured bread, toasted
Method:

Chop the basil in a food processor. Gradually pour in
half the oil, pulsing until smooth.

Transfer to a small bowl and let stand for 1 hour.

Arrange the salad greens on individual serving
plates. Drizzle with the lemon juice and remaining
oil. Season with salt and pepper.

Heat a grill pan over medium heat. Cook the cheese
for 5 minutes until soft and warmed through.

Arrange the cheese on top of the salad and serve
with the toast. Drizzle with the basil dressing.
