Warm Goat's Cheese with Basil Recipe

 

Ingredients

 

Serve 6

  • 1 large bunch fresh basil

  • 1/2 cup/125 ml extra-virgin olive oil

  • 8 oz/250 g mixed salad greens, well-washed

  • juice of 1 lemon

  • salt and freshly ground black pepper to taste

  • 4 small rounds of goats cheese

  • 4 slices firm-textured bread, toasted


Method:

  1. Chop the basil in a food processor. Gradually pour in half the oil, pulsing until smooth.

  2. Transfer to a small bowl and let stand for 1 hour.

  3. Arrange the salad greens on individual serving plates. Drizzle with the lemon juice and remaining oil. Season with salt and pepper.

  4. Heat a grill pan over medium heat. Cook the cheese for 5 minutes until soft and warmed through.

  5. Arrange the cheese on top of the salad and serve with the toast. Drizzle with the basil dressing.
