Tomato and
Bell Pepper Frittata Recipe

12 oz/350
g mixed bell peppers/capsicums, seeded, cored, and coarsely chopped
1 onion, thinly sliced
2 tbsp extra-virgin olive oil
12 oz/350 g cherry
tomatoes, coarsely chopped
4 leaves fresh basil,
torn
alt to taste
6 eggs
Method:
Sauté the bell peppers and onion in the oil in a
large frying pan over medium heat for about 10
minutes, or until the bell peppers and onions are
tender.
Stir in the tomatoes and basil. Season with salt.
Beat the eggs in a medium bowl until frothy. Season
with salt.
Pour the eggs into the frying pan. Stir well and
cook until the eggs have set.
Turn on the broiler (grill) and broil the frittata
for 3-4 minutes, or until the top
is golden.
Serve hot.
