Sauté
the garlic and onion in 1 tablespoon of oil in a
large frying pan over medium heat until the garlic
is pale gold.
Add the tomatoes, cilantro, and soy sauce. Cook over
medium heat for 10 minutes, or until the tomatoes
have reduced.
Beat the eggs in a medium bowl.
Heat the oil
in a large frying pan until hot. Pour in half the
egg mixture and cook for 4-5 minutes. or until set
on top.
Turn the omelet carefully and cook for 4 minutes
more. It should be firm and lightly browned
on both sides.
When the omelet is almost
cooked, spoon half the tomato mixture into the
center. Fold the sides in over the filling to make a
square parcel. Cut into squares.
Repeat with the
remaining egg and tomato.
Serve hot.
