Mixed Cheese Pie Recipe

 

Ingredients

 

Serve 4-6

 

Dough:

  • 1/2 oz/15 g fresh yeast or 1 package (1/4oz/7-g) active dry yeast

  • 2 cups/500 ml warm milk

  • 1 tsp sugar

  • 1 1/3 cups/200 g all purpose/plain flour

  • 1/4 tsp salt

Filing:

  • 8 oz/250 g mixed cheeses, such as Mozzarella, Provolone, and Fontina, cut into small cubes

  • 2 tbsp all-purpose/plain flour

  • 1 cup/250 ml milk

  • freshly ground black pepper to taste

  • 3 eggs, separated


Method:

  1. Dough: Dissolve the yeast, milk, and sugar in a small bowl for 5 minutes, until foamy.

  2. Sift the flour and salt into a bowl. Mix in the yeast mixture to make a firm dough. Knead until elastic.

  3. Shape into a ball, place in an oiled bowl, and cover with a clean cloth. Let rise for 1 hour, or until doubled in bulk.

  4. Preheat the oven to 400°F/200°C/gas 6. Butter a baking dish.

  5. Roll the dough out on a lightly floured surface until large enough to cover the bottom and sides of the dish.

  6. Filling: Mix the cheeses, flour, and milk in a saucepan. Season with pepper and cook over low heat until melted. 

  7. Beat in the egg yolks. Beat the egg whites in a large bowl until stiff. Fold the whites into the cheese filling. Pour into the dough base.

  8. Bake for 25-30 minutes, or until the filling is golden brown on top. Serve hot.
