oz/250 g
mixed cheeses, such as
Mozzarella, Provolone, and Fontina, cut into small
cubes

2 tbsp all-purpose/plain flour

1 cup/250 ml milk

freshly ground black pepper to taste

3 eggs, separated
Method:

Dough:
Dissolve the yeast, milk, and sugar in a small bowl
for 5 minutes, until foamy.

Sift the flour and salt into a bowl. Mix in the
yeast mixture to make a firm dough. Knead until
elastic.

Shape into a ball, place in an oiled bowl, and cover
with a clean cloth.
Let rise for 1 hour, or until doubled in
bulk.

Preheat the oven to 400°F/200°C/gas 6.
Butter a baking dish.

Roll the dough out on a lightly floured surface
until large enough to cover the bottom and sides of
the dish.

Filling: Mix the cheeses, flour, and milk in a
saucepan. Season with pepper and cook over low heat
until melted.

Beat in the egg yolks.
Beat the egg whites in a large bowl until stiff.
Fold the whites into the cheese filling.
Pour into the dough base.

Bake for
25-30
minutes, or until the filling is golden brown on
top.
Serve hot.
