Frittata
with Mint Recipe

2 tbsp fine dry bread crumbs

1 small bunch parsley, finely chopped

25 leaves fresh mint, torn

salt and freshly ground black pepper to taste

1-2 tbsp
extra virgin olive oil
Method:

Break
the eggs into a bowl and beat until frothy. Stir in
the bread crumbs, parsley, and mint. Season with
salt and pepper.

Heat the oil in a large frying pan. Pour in the egg
mixture and cook for 4-5 minutes, or until set on
top.

Turn the frittata carefully and cook for 4
minutes more. It should be firm and lightly browned
on both sides.
Serve hot.
