Frittata with Mint Recipe

 

Ingredients

 

Serve 4

  • 6 eggs

  • 2 tbsp fine dry bread crumbs

  • 1 small bunch parsley, finely chopped

  • 25 leaves fresh mint, torn

  • salt and freshly ground black pepper to taste

  • 1-2 tbsp extra virgin olive oil


Method:

  1. Break the eggs into a bowl and beat until frothy. Stir in the bread crumbs, parsley, and mint. Season with salt and pepper.

  2. Heat the oil in a large frying pan. Pour in the egg mixture and cook for 4-5 minutes, or until set on top.

  3. Turn the frittata carefully and cook for 4 minutes more. It should be firm and lightly browned on both sides. Serve hot.
