French-Style Eggs Recipe

 

Ingredients

 

Serve 4

  • 10 firm-ripe tomatoes, peeled

  • salt to taste

  • 12 black or green olives, pitted and finely sliced

  • 4 hard-boiled eggs, thinly sliced

  • 1 tbsp finely chopped parsley

  • whites of 2 leeks, finely chopped

  • 2 cups/500 ml Béchamel Sauce (refer recipe)

  • . 2 tbsp butter, cut into flakes

 


Method:

  1. Preheat the oven to 400°F/200°C/gas 6.

  2. Cut the tomatoes in half lengthwise. Butter an ovenproof baking dish and place a layer of tomatoes on the bottom. Season with salt.

  3. Cover with half the olives, half the eggs, half the parsley, and a pinch of salt. Top with a thin layer of leeks and half the Béchamel.

  4. Repeat the layers until all the ingredients are used, finishing with the Béchamel. Dot with the butter.

  5. Bake for 25-30 minutes, or until bubbling and lightly browned. Serve hot.
