French-Style Eggs Recipe
Ingredients

10 firm-ripe tomatoes, peeled

salt to taste

12 black or green olives, pitted and finely sliced

4 hard-boiled eggs, thinly sliced
-
1 tbsp finely chopped parsley
-
whites of 2 leeks,
finely chopped

2 cups/500 ml
Béchamel Sauce (refer recipe)

2 tbsp butter, cut into flakes
Method:

Preheat the oven to 400°F/200°C/gas 6.

Cut the tomatoes in half lengthwise. Butter an
ovenproof baking dish and place a layer of tomatoes
on the bottom. Season with salt.

Cover with half the olives, half the eggs, half the
parsley, and a pinch of salt. Top with a thin layer
of leeks and half the Béchamel.

Repeat the layers until all the ingredients are
used, finishing with the Béchamel. Dot with the
butter.

Bake for
25-30
minutes, or until bubbling and lightly
browned.
Serve hot.
