Crudités with Fresh Cheese Recipe

 

Ingredients

 

Serve 6

  • 1 1/2 lb/750 g mixed fresh vegetables, such as mixed bell peppers, halved, and celery, carrots, or fennel

  • salt and freshly ground black pepper to taste

  • 2 tbsp extra-virgin olive oil

  • 6 small fresh cheeses (such as goats cheese or Tomini)


Method:

  1. Preheat the oven to 425°F/220°C/gas 7. Line a baking sheet with waxed paper.

  2. Cut the vegetables into equal-sized sticks. Arrange them around the edges of individual serving plates.

  3. Season with salt and drizzle with the oil. Place the cheeses on a baking sheet.

  4. Bake for about 5 minutes, or until warm and slightly melted.

  5. Arrange one form of cheese in the center of each plate with the crudités. Season with black pepper and serve immediately.
