Broccoli with Eggs Recipe

 

Ingredients

 

Serve 4

  • 2 lb/1 kg broccoli, cut into florets

  • 1 clove garlic, lightly crushed but whole

  • 1/2 cup/125 ml extra-virgin olive oil

  • 4 eggs

  • 1 cup/125 g freshly grated Pecorino cheese

  • salt and freshly ground black pepper to taste

  • 1 fresh spicy red chili pepper, finely sliced, to garnish (optional)


Method:

  1. Cook the broccoli in salted, boiling water for 8 minutes, or until crunchy-tender. Drain, taking care not to break up the florets.

  2. Sauté the garlic in 4 tablespoons of oil in a frying pan over medium heat until the garlic is pale gold.

  3. Discard the garlic. Add the broccoli to the oil and sauté for 5 minutes.

  4. Beat the eggs. and Pecorino in a medium bowl. Season with salt and pepper.

  5. Heat the remaining oil in a frying pan until very hot and pour in the eggs. Stir with a fork until cooked and creamy.  

  6. Arrange the broccoli on a serving dish. Spoon the eggs over the top, garnish with the chili pepper, if liked, and serve hot.
