Baked Potato Frittata Recipe

 

Ingredients

  • 10 oz/300 g potatoes, peeled and thinly sliced

  • 1 large red onion, coarsely chopped

  • 2 tbsp extra-virgin olive oil

  • salt to taste

  • 4 eggs

  • 1 tbsp freshly grated Parmesan cheese


Method:

  1. Preheat the oven to 375°F /190°C/gas 5. Oil a 9-inch (23-cm) baking pan.

  2. Cook the potato slices in a large pot of salted, boiling water for 8-10 minutes, or until tender. Drain well and set aside.

  3. Sauté the onion in the oil in a large frying pan over medium heat for 10 minutes, or until lightly browned. Season with salt.

  4. Beat the eggs in a medium bowl. Mix in the potatoes, onions, and Parmesan.

  5. Pour the mixture into the prepared pan. Bake for 12-15 minutes, or until golden brown. Serve hot or at room temperature.
