Watermelon
Basket with Ice Cream Recipe

1 watermelon, weighing about 4
lb/2
kg
1 1/2 lb/750 g
strawberries, washed and hulled
4 tbsp sugar
1 lb/500 g lemon ice cream
1 lb/500 g pistachio Ice cream
Method:
Use a
sharp
knife to
cut out two semi-circles from the watermelon
leaving a strip in the center. The watermelon
should look like a basket with a handle.
Remove the flesh from
underneath the
strip and from the remaining melon with a melon-baller,
taking care not to damage the skin.
Place the
melon balls in a bowl with the strawberries. Sprinkle with sugar and stir carefully.
Refrigerate until ready to serve.
Place the
watermelon basket on a serving dish and cut a
zigzag pattern around the edge.
Just before serving,
fill with balls of the two types of ice cream, melon
balls, and strawberries.
