Semolina Pudding with Fruit Compote Recipe

 

Ingredients

 

Serve 4

  • 1 apple, peeled, cored, and chopped into bite-size pieces

  • 1 pear, peeled, cored, and chopped into bite-size pieces

  • 1 orange, peeled and sliced

  • 4 kumquats, sliced

  • 6 prunes, pitted and halved

  • 6 apricots, pitted and halved

  • 1 cup/250 ml fruity red wine

  • 1 stick cinnamon

  • 1/3 cup/50 g confectioners'/icing sugar

  • 1 1/4 quarts/1.25 liters milk

  • 1 vanilla pod

  • 1 tbsp butter

  • 1/8 tsp salt

  • 1 1/3 cups/250 g semolina


Method:

  1. Place all the fruit in a large saucepan over low heat and pour in the wine. Add the cinnamon and 1 tablespoon of confectioners' sugar.

  2. Cook for 20 minutes, stirring occasionally. Remove from the heat and discard the cinnamon.

  3. Bring the milk to a boil with the vanilla, butter, and salt in a large saucepan over medium heat. Lower the heat and discard the vanilla pod.

  4. Gradually sprinkle in the semolina, whisking constantly to prevent lumps from forming.

  5. Add the' remaining sugar and cook for 15 minutes, stirring constantly, until the semolina has thickened.

  6. Butter a 2-quart (2-1iter) ring mold. Pour the semolina into the prepared mold and let cool for 15 minutes.

  7. Turn out the semolina onto a serving dish and arrange the fruit in the center. Serve warm.
