Ice Cream with Three Sauces Recipe

 

Ingredients

Strawberry Sauce:

  • 12 oz/350 g strawberries, washed and hulled

  • 1/4 cup/50 g granulated sugar

  • juice of 1/2 lemon

  • 4 tbsp Maraschino liqueur 

Kiwi Sauce:

  • 3 kiwifruit, peeled

  • 1/4 cup/50 g granulated sugar

  • 1 tbsp lemon juice 

Passion fruit Sauce:

  • 3 passion fruit

  • 1/4 cup/50 g granulated sugar

  • juice of 1/2 lemon 

  • 10 oz/300 g vanilla ice-cream

  • 10 oz/300 g lemon ice-cream


Method:

  1. Strawberry Sauce: Process the strawberries in a food processor or a blender until smooth.

  2. Bring the sugar and water to a boil in a small saucepan and cook for 8 minutes, or until the sugar has dissolved completely.

  3. Add the pureed strawberries and cook until the sauce thickens.

  4. Remove from the heat and let cool. Mix in the lemon juice and Maraschino.

  5. Kiwi Sauce: Process the kiwifruit in a food processor or blender with the sugar and lemon juice.

  6. Passion fruit Sauce: Halve the 3 passion fruit, scrape out the flesh and seeds, and place them in a bowl.

  7. Add the sugar and lemon juice. Use a wooden spoon to mix well. Serve the three sauces chilled with the ice cream.
