Cream-Filled Figs Recipe

12 firm-ripe green figs
-
2 cups/500 g vanilla
ice cream, softened

1 cup/250 ml
heavy/double cream
-
1 tbsp confectioners'/icing
sugar
-
4 tbsp pine nuts, toasted

1 tbsp sweetened
cocoa powder
Method:

Cut the figs in half and use a teaspoon to remove the
flesh.
Stir the flesh into the ice cream in a medium bowl.

Spoon the ice cream into the fig skins.
Freeze for about 30 minutes, or until firm.

Beat the cream and confectioners' sugar in a large
bowl with an electric mixer at high speed
until stiff.

Decorate the figs with the cream. Sprinkle with the
pine nuts and dust with the cocoa.
Serve immediately.
