Easy Lime Cheesecake Recipe

 

Ingredients

 

Serve 4-6

 

Crumb Base:

  • 3/4 cup/100 g graham cracker crumbs/crushed digestive biscuits

  • 2 tbsp brown sugar

  • 4 tbsp butter, melted

Lime Filling:

  • 1 2/3 cups/400 ml sweetened condensed milk

  • 1 cup/250 ml cream cheese, softened

  • 1/2 cup/125 ml light/single cream

  • 2 tbsp grated lime zest

  • 4 tbsp lime juice


Method:

  1. Butter a 9-inch (23-cm) spring form pan.

  2. Crumb Base: Mix the crumbs, sugar, and butter in a small bowl. Press into the bottom of the prepared pan. Refrigerate for 1 hour.

  3. Lime Filling: Beat the condensed milk, cream cheese, cream, and lime zest in a large bowl with an electric mixer at low speed until creamy.

  4. Beat in the lime juice. Spoon the filling into the crust. Refrigerate for 4 hours. Loosen and remove the pan sides. 

  5. Topping: Beat the cream in a large bowl until stiff. Spread the cream over the filling and decorate with the fruit.
