Cheesecake Recipe

Crumb Base:
Lime Filling:

1 2/3 cups/400 ml
sweetened
condensed milk

1 cup/250 ml cream cheese, softened

1/2 cup/125 ml light/single cream

2 tbsp grated lime zest

4 tbsp lime juice
Method:

Butter a 9-inch
(23-cm)
spring form pan.

Crumb
Base: Mix the crumbs, sugar, and butter in a small
bowl.
Press into the bottom of the prepared
pan.
Refrigerate for 1 hour.

Lime Filling: Beat
the condensed milk, cream cheese, cream, and lime
zest in a large bowl with an electric mixer at low
speed until creamy.

Beat in the lime juice.
Spoon the filling into the crust.
Refrigerate for 4
hours.
Loosen and remove the pan sides.

Topping: Beat the cream in a large bowl until stiff.
Spread the cream over the filling and decorate with
the fruit.
