Chilled Ricotta with Fruit Recipe

 

Ingredients

 

Serve 4

  • 3 1/4 cups/810 g Ricotta cheese

  • generous 3/4 cup/200 g honey

  • 2 kiwifruit, peeled

  • 6 strawberries

  • 1 banana, peeled

  • 1 orange, peeled

  • juice of 1 lemon

  • 2 tbsp granulated sugar


Method:

  1. Place the Ricotta and honey in a food processor or blender and process until well blended.

  2. Butter a 10-inch (25-cm) baking pan. Pour the Ricotta mixture into the prepared pan and refrigerate for at least 3 hours.

  3. Cut the fruit into bite-size pieces and mix with the sugar and lemon juice in a large bowl.

  4. Turn the Ricotta out onto a large serving plate and top with the fruit salad. Serve in slices.
