Apricot with Mascarpone Recipe

 

Ingredients

 

Serve 6-8

  • 3 cups/600 g granulated sugar

  • 3 cups/750 ml water

  • 2 3/4 cups/500 g dried apricots, soaked overnight and drained

  • 1 tbsp fresh lemon juice

  • 2 cups/500 g Mascarpone cheese

  • 2 cups/200 g chopped pistachios


Method:

  1. Dissolve the sugar in the water in a large saucepan over low heat and bring to a boil.

  2. Add the apricots and cook for 10-15 minutes, or until the apricots are tender and a syrup has formed. Add the lemon juice and remove from  the heat.

  3. Use a slotted spoon to transfer the apricots to a plate and let cool. Cut open each apricot and fill with the Mascarpone.

  4. Arrange the stuffed apricots on a serving dish. Drizzle with the  syrup and sprinkle with the pistachios.
