2 tsp baking powder

1 1/2 tsp ground cinnamon

1 1/2 tsp freshly
grated nutmeg

1/8 tsp salt

4 tbsp butter, softened

1 1/2 cups/300 g
granulated sugar

zest of 1 lemon
-
1 cup/180 g golden raisins/sultanas

3 oz/90 g tomatoes, peeled and finely chopped
Method:

Preheat the oven to 325°F/170°C/gas 3.
Butter a 9-inch (23-cm) cake pan.

Sift the flour, baking powder, cinnamon, nutmeg, and
salt into a large bowl.

Beat the butter and sugar in a large bowl with an
electric mixer at high speed until
creamy.

Mix in the dry ingredients, lemon zest,
raisins, and tomatoes.
Spoon the batter into the prepared pan.

Bake for 1 hour, or until golden
and well risen.
Let cool completely.
