Sweet Tomato Cake Recipe

 

Ingredients

  • 3 1/3 cups/500 g all purpose/plain flour

  • 2 tsp baking powder

  • 1 1/2 tsp ground cinnamon

  • 1 1/2 tsp freshly grated nutmeg

  • 1/8 tsp salt

  • 4 tbsp butter, softened

  • 1 1/2 cups/300 g granulated sugar

  • zest of 1 lemon

  • 1 cup/180 g golden raisins/sultanas

  • 3 oz/90 g tomatoes, peeled and finely chopped


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Butter a 9-inch (23-cm) cake pan.

  2. Sift the flour, baking powder, cinnamon, nutmeg, and salt into a large bowl.

  3. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  4. Mix in the dry ingredients, lemon zest, raisins, and tomatoes. Spoon the batter into the prepared pan.

  5. Bake for 1 hour, or until golden and well risen. Let cool completely.
