Spicy Carrot and Raisin Loaf Recipe

 

Ingredients

 

Serve 4-6

  • 2 eggs

  • 1/2 tsp baking soda

  • 1 tsp chili powder

  • 2 large carrots, sliced into rounds

  • 6 tbsp butter, melted

  • 3/4 cup/150 g raw sugar

  • 1 1/4 cups/180 g whole-wheat/whole meal flour

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 2/3 cup/120 g golden raisins/sultanas

  • 4 tbsp milk


Method:

  1. Preheat the oven to 350°F/180°C/gas 4.

  2. Butter an 8 1/2 x 4 1/2-inch (21x11-cm) loaf pan. Line with foil, letting the edges overhang. Butter the foil.

  3. Place the eggs, baking soda, chili powder, and carrots in a blender and process until the carrots are finely chopped. Add the butter and sugar and pulse until smooth.

  4. Transfer to a large bowl and mix in the whole-wheat flour, baking powder, salt, raisins, and milk. Spoon the batter into the mold.

  5. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool the loaf on a rack for 10 minutes. Using the foil as a lifter, remove the loaf from the pan.

  7. Carefully remove the foil. Cool the loaf completely on a rack.
