Raisin-Nut Loaf Recipe

Ingredients

Serve 6

  • 3/4 cup/120 g raisins

  • 1 1/2 cups/375 ml warm water

  • 1 1/2 cups/225 g all purpose/plain flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup/100 g granulated sugar

  • 1/2 cup/125 ml milk

  • 1 large egg, lightly beaten

  • 4 tbsp butter, melted

  • 3/4 cup/75 g chopped hazelnuts

  • 1/2 cup/50 g chopped almonds

  • 2 tbsp mixed chopped nuts, to decorate

Method:

  1. Plump the raisins in the water in a small bowl for 30 minutes. Drain well and pat dry with paper towels.

  2. Preheat the oven to 350°F/180°C/gas 4.

  3. Butter an 8 1/2 x 4 1/2-inch (21 x 11-cm) loaf pan. Line with aluminum foil, letting the edges overhang. Butter the foil.

  4. Sift the flour, baking powder, and salt into a large bowl.

  5. Beat in the sugar, milk, egg, and butter. Stir in the hazelnuts, almonds, and raisins. Spoon the batter into the prepared pan.

  6. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool in the pan on a rack for 10 minutes. Using the foil as a lifter, remove the loaf from the pan.

  8. Carefully remove the foil and let cool completely. Decorate with the chopped nuts.
