Marzipan Cookies Recipe

  • generous 2 1/2 cups/400 g blanched almonds

  • 1 cup/150 g confectioners'/icing sugar

  • 3 tbsp warm water

  • 1 cup/100 g chopped pine nuts

  • 1/3 cup/50 g confectioners' sugar, to dust


Method:

  1. Chop the almonds in a food processor or blender until finely ground. Transfer to a large bowl and mix in the sugar.

  2. Beat the confectioners' sugar and water in a medium bowl until a thick paste has formed. Mix into the almond mixture.

  3. Roll out he marzipan on a work surface dusted with confectioners' sugar. Shape into a ball. Let rest for 30 minutes.

  4. Break off pieces of dough and form into balls the size of marbles.

  5. Roll in the pine nuts and dust with the remaining confectioners' sugar.
