Carrot, Date and Walnut Cake Recipe

 

Ingredients

 

Serve 6-8

  • 1 1/2 cups/225 g all purpose/plain flour

  • 2 tsp baking powder

  • 1 1/2 tsp chili powder

  • 1/2 tsp baking soda

  • 1/8 tsp salt

  • 1/2 cup/125 g butter

  • 3/4 cup/150 g granulated sugar

  • 2 eggs

  • 1/2 tsp vanilla extract

  • 8 oz/250 g finely shredded carrots

  • 2/3 cup/120 g chopped dates

  • 1 cup/100 g chopped walnuts                   


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 10 1/2-inch (26-cm) ring mold.

  2. Sift the flour, baking powder, chili powder, baking soda, and salt into a medium bowl.

  3. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy. Add the eggs and vanilla, beating until just blended.

  4. Mix in the carrots, dates, and walnuts, followed by the dry ingredients. Spoon the batter into the prepared mold.

  5. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool in the pan for 15 minutes. Turn out onto a rack and let cool completely.
