Banana Cake with Passion Fruit Frosting Recipe

 

Ingredients

 

Serve 6

  • 1 2/3 cups/250 g all purpose/plain flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp ground ginger

  • 1/2 cup/125 g butter, softened

  • 3/4 cup/150 g firmly packed light brown sugar

  • 3 large eggs

  • 10 oz/300 g very ripe bananas, mashed

  • 1/2 cup/125 ml sour cream

  • 4 tbsp milk

  • Passion fruit Frosting:

  • 1 2/3 cups/250 g confectioners'/icing sugar

  • 3 tbsp passion fruit pulp

  • 1 tbsp butter, softened


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 9-inch (23-cm) cake pan and line with waxed paper.

  2. Sift the flour, baking powder, baking soda, and ginger into a medium bowl.

  3. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy. Add the eggs, extra. beating until just blended.

  4. Mix in the dry ingredients, mashed banana, sour cream, and milk. Spoon the batter into the prepared pan.

  5. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Cool the cake in the pan for 10 minutes. Turn out onto a rack and let cool completely.

  6. Passion fruit Frosting: Beat the  confectioners' sugar, passion fruit pulp, and butter in a double boiler over barely simmering water until creamy.

  7. Spread evenly over the top and sides of the cake.
