Apple and Raisin Cake Recipe

 

Ingredients

  • 1 1/2 cups/225 g all purpose/plain flour

  • 2 tsp baking powder

  • 1 tsp ground cinnamon

  • 1 tsp ground nutmeg

  • 1/2 tsp baking soda

  • 1/8 tsp salt

  • 1 1/3 cups/270 g firmly packed light brown sugar

  • 3 large eggs

  • 4 tbsp butter, softened

  • 1/2 tsp vanilla extract

  • 2 apples, grated

  • 1 cup/150 g golden raisins/sultanas

  • 1 cup/100 g chopped walnuts


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 9-inch (23-cm) square pan.

  2. Sift the flour, baking powder, cinnamon, nutmeg, baking soda, and salt into a large bowl.

  3. Mix in the brown sugar, eggs, butter, and vanilla extract until well blended.

  4. Add the apples, raisins, and walnuts. Spoon the batter into the prepared pan.

  5. Bake for 60-75 minutes, or until a toothpick inserted into the center comes out clean. Cool completely in the pan.
