Apple and Cinnamon Streusel Cake Recipe

 

Ingredients

 

Serve 6

  • 3 medium apples (weighing 1 lb/500 g in total)

  • 2 tbsp brown sugar

  • 4 tbsp lemon juice

  • 2 1/3 cups/350 g all purpose/plain flour

  • 2 tsp baking powder

  • 1/8 tsp salt

  • 3/4 cup/150 g butter, softened

  • 3/4 cup/150 g granulated sugar

  • 2 eggs

  • 3/4 cup/150 ml milk 

Cinnamon Streusel:

  • 1 cup/150 g all­purpose/plain flour

  • 1/2 cup/100 g brown sugar

  • 1 tbsp ground cinnamon

  • 6 tbsp butter, in pieces

  • 2/3 cup/100 g chopped walnuts             


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 9-inch (23-cm) square pan and line with waxed paper.

  2. Peel and core the apples and slice them thinly. Place the apples, brown sugar, and lemon juice in a medium saucepan over medium-low heat and bring to a boil.

  3. Cover and simmer over low heat for about 10 minutes, or until the apples have softened. Drain the apples.

  4. Sift the flour, baking powder, and salt into a medium bowl. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  5. Add the eggs, beating until just blended. Mix in the dry ingredients and milk.

  6. Spoon two-thirds of the batter into the prepared pan. Spoon the cooked apples over the top. Cover with the remaining mixture.

  7. Cinnamon Streusel: Mix the flour, brown sugar, and cinnamon. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Add the walnuts and sprinkle over the cake.

  8. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the pan.
