Apple and
Cinnamon Streusel Cake Recipe

2 eggs
3/4 cup/150 ml milk
Cinnamon Streusel:
1
cup/150 g allpurpose/plain flour
1/2 cup/100 g brown sugar
1 tbsp ground cinnamon
6
tbsp butter, in pieces
2/3 cup/100 g chopped walnuts
Method:
Preheat
the oven to 350°F/180°C/gas 4.
Butter a 9-inch (23-cm) square pan and line
with waxed paper.
Peel and core the apples and
slice them thinly.
Place the apples, brown sugar,
and lemon juice in a medium saucepan over
medium-low heat and bring to a boil.
Cover and
simmer over low heat for about 10 minutes, or until
the apples have softened.
Drain the apples.
Sift the flour, baking powder, and salt into a
medium bowl.
Beat the butter and sugar in a large bowl with an
electric mixer at high speed until creamy.
Add the eggs, beating until just blended.
Mix in the dry ingredients and milk.
Spoon two-thirds of the batter into the prepared
pan. Spoon the cooked apples over the top. Cover
with the remaining mixture.
Cinnamon Streusel: Mix the flour, brown sugar, and
cinnamon. Use a pastry blender to cut in the butter
until the mixture resembles coarse crumbs. Add the
walnuts and sprinkle over the cake.
Bake for
40-50
minutes, or until a toothpick inserted into the
center comes out clean.
Let cool completely in the pan.
