Olive and Thyme Focaccia

Makes
one (10x15-inch/25x30cm) Focaccia

1 quantity Focaccia Dough (refer recipe)

2 oz/60 g pitted green olives
-
1 small bunch fresh thyme
-
1 tbsp extra-virgin olive oil
-
1 tbsp water

coarse sea salt to taste
Method:

Prepare
the focaccia dough and set aside to rise (about 1
hour). Process the olives and a sprig of thyme in a
food processor or blender until finely chopped.

Knead the olive
mixture into the dough. Let rise for 30 more
minutes.

Preheat the oven
to 450°F/220°C/gas 7. Oil a baking sheet. Roll the
dough out into a rectangle about 10 x 15 inches (25
x 38 cm) and place on the baking sheet.

Dimple the
surface with your fingertips. Brush with the oil and
water. Sprinkle with sea salt.

Bake for 30
minutes, or until golden. Serve hot or at room
temperature.
