Italian Flatbread with Cheese Recipe

 

Ingredients

 

Makes 9 flatbreads 

  • 1/2 tsp active dried yeast

  • 1 tsp salt

  • 1 3/4 cups/430 ml warm water

  • 5 cups/750 g all purpose/plain flour

  • scant 1 cup/225 g vegetable shortening, melted

  • 2 tbsp extra-virgin olive oil

  • 8 oz/250 g fresh creamy cheese (cream cheese, mascarpone, Crescenza, Robiola)


Method:

  1. Dissolve the yeast with the salt in the water for 15 minutes, until foamy.

  2. Sift the flour onto a clean surface and make a well in the center.

  3. Mix in the shortening and yeast mixture to make a dough. Knead the dough until smooth and elastic, adding the oil a little at a time as you knead.

  4. Divide the dough into 9 pieces. Shape each piece into a ball. 

  5. Roll out each piece of dough to about 6-7 inch (15-18 cm) in diameter.

  6. Cook on a cast-iron griddle until bubbles appear on the surface.

  7. Spread with the cheese. Fold in half and warm again on the griddle.
