Filled Brioche Recipe

 

Ingredients

 

Makes one (11-inch/28cm) brioche 

Dough:

  • 1 oz/30 g fresh yeast or 2 (1/4-oz/7-g) packages active dry yeast

  • 1 tbsp sugar

  • 1 cup/50 ml warm water

  • 3 1/3 cups/500 g all purpose/plain flour

  • 1/2 cup/125 g butter

  • 1 egg

  • 1/8 tsp salt

  • 2 tbsp milk

Filing:

  • 2/3 cup/150 g soft goat cheese

  • 3 oz/90 g Mozzarella cheese, diced

  • 1 clove garlic, finely chopped

  • freshly ground black pepper to taste

  • 1 tbsp milk


Method:

  1. Dough: Dissolve the yeast with the sugar in 4 tablespoons of water and set aside for 15 minutes, until foamy.

  2. Pulse the flour, butter, yeast mixture, 1 egg, and salt in a blender. Gradually trickle in the remaining water and milk to make a smooth dough. Cover and let rise for 30 minutes, or until doubled in size.

  3. Butter and flour an 11-inch (28-cm) baking dish.

  4. Filling: Mix the goat cheese, Mozzarella, garlic, and pepper in a large bowl. Form the dough into small balls. Stuff with a teaspoon of filling and seal the dough around it.

  5. Place the balls of dough in the prepared dish. Let rise for 30 minutes.

  6. Preheat the oven to 400°F/200°C/gas 6. Brush with the beaten egg and milk.

  7. Bake for 30 minutes, or until lightly browned. Serve hot.
