Filled Brioche Recipe
Ingredients
Makes one (11-inch/28cm) brioche
Dough:
Filing:

2/3 cup/150 g soft goat cheese

3 oz/90 g Mozzarella cheese, diced

1 clove garlic, finely chopped

freshly ground black pepper to taste

1 tbsp milk
Method:

Dough: Dissolve
the yeast with the sugar in 4 tablespoons of water
and set aside for 15 minutes, until foamy.

Pulse the
flour, butter, yeast mixture, 1 egg, and salt in a
blender. Gradually trickle in the remaining water
and milk to make a smooth dough. Cover and let rise
for 30 minutes, or until doubled in size.

Butter and
flour an 11-inch (28-cm) baking dish.

Filling: Mix
the goat cheese, Mozzarella, garlic, and pepper in a
large bowl. Form the dough into small balls. Stuff
with a teaspoon of filling and seal the dough around
it.

Place the balls
of dough in the prepared dish. Let rise for 30
minutes.

Preheat the
oven to 400°F/200°C/gas 6. Brush with the beaten egg
and milk.

Bake for 30
minutes, or until lightly browned. Serve hot.
