Cheese-Filled Focaccia

Ingredients
Makes one (10x15-inch/25x30cm) Focaccia

1 quantity Focaccia Dough

1 tsp salt

6 tbsp extra-virgin olive oil

1 cup/250 ml water
-
1 1/4
cups/300 g Stracchino (or other fresh, creamy)
cheese, melted with 1 tablespoon milk
Method:

Prepare the
focaccia dough, kneading in 4 tablespoons of oil as
you work. Set aside to rise (about 1 hour).

Oil a 10 x
15-inch (25 x 38-cm) baking pan. Divide the dough in
two and roll both pieces out to fit the pan.

Place one piece
in the pan. Spread with the cheese, leaving a
1/2-inch (1-cm) border around the edges, and cover
with the remaining dough. Press down at the edges to
seal. Let rise for 30 more minutes.

Preheat the oven
to 450°F/220°C/gas 7. Bake for 25-30 minutes, or
until golden brown. Serve hot.
