Pesto Recipe
Ingredients
Makes
1 generous cup

2 cups/45 g fresh
basil leaves
-
2 tbsp pine nuts
-
2 cloves garlic
-
1/2 cup/125 ml extra-virgin olive oil
-
4 tbsp freshly grated Parmesan cheese
-
about 2 tbsp boiling water
-
salt and freshly ground black pepper to taste
Method:

Place
the basil, pine nuts, garlic, oil, salt, and pepper
in a food processor or blender and chop until
smooth.

Transfer the mixture to a medium bowl and stir in
the cheese and water.

The amount of water required
will vary according to how you intend to use the
pesto.
