Pesto Recipe

 

Ingredients

 

Makes 1 generous cup

  • 2 cups/45 g fresh basil leaves

  • 2 tbsp pine nuts

  • 2 cloves garlic

  • 1/2 cup/125 ml extra-virgin olive oil

  • 4 tbsp freshly grated Parmesan cheese

  • about 2 tbsp boiling water

  • salt and freshly ground black pepper to taste


Method:

  1. Place the basil, pine nuts, garlic, oil, salt, and pepper in a food processor or blender and chop until smooth.

  2. Transfer the mixture to a medium bowl and stir in the cheese and water.

  3. The amount of water required will vary according to how you intend to use the pesto.
