Sweetcorn Soup

Ingredients

oz soy margarine

2 medium onions, sliced
-
325g/11 1/2oz tinned
sweetcorn

3 cups/700ml/1 1/2pt vegetable or chicken stock

cup/200ml/7fl oz soy milk

salt and black pepper

croutons for garnish
Serves 4
Method:

Melt the soya margarine in a pan. Add the onion and
sweetcorn and fry for 2 to 3 minutes.

Add the
stock, bring to a boil and simmer for 30 minutes.
Turn off the heat.

When the liquid has cooled,
puree it in a food processor until smooth.

Return to
the pan, add the soy milk and season with salt and
pepper to taste. Garnish with the croutons.
Note: This
light, non-oily soup is delicious served with
freshly baked French Bread.
