Soy Sausage and
Pepper Stew

Ingredients

2 Tbsp sunflower oil

8 soy or tofu sausages

1 medium onion, sliced

1 red pepper, seeded and sliced

1 green pepper,
seeded and sliced

100g/4oz button mushrooms, sliced

1 Tbsp plain flour
-
400g/14oz tin tomatoes
-
2 Tbsp red wine vinegar
-
2 Tbsp Worcester sauce
-
2 Tbsp brown sugar
-
1 Tbsp English made mustard

1 1/4 cups/10fl oz/280ml
vegetable
or chicken stock

1 Tbsp fresh parsley, chopped

salt and black pepper
Serves 4
Method:

Heat 1 tablespoon of oil in a skillet and brown the
sausages lightly. Add another tablespoon of oil to
the pan and then add the onion, red and green bell
peppers, and mushrooms, and fry for 2 to 3 minutes.

Add the flour, then stir for 1 minute. Add the
tomato, vinegar, Worcestershire sauce, sugar, and
mustard, and stir well.

Add the stock and parsley,
and bring to a boil. Simmer for 30 minutes. Season
with salt and pepper.

Serve with your choice of
mashed potato, rice, or tagliatelle.
Note:
"Hearty" used to be a euphemism for "High-fat". This
recipe gives a traditional European peasant dish a
healthy twist.
