Soy Patties in
Goulash

Ingredients

125g/4 oz Vegeburger soy mix (1 packet)

1 small egg, beaten

1/2 cup/110ml/4fl oz water

3 Tbsp virgin oil

1 onion, chopped
-
1 green pepper, deseeded and sliced

2 Tbsp paprika
-
2 tsp caraway seeds
-
2 tsp plain flour
-
200g/7oz tin tomatoes
-
200ml/7fl oz vegetable or
chicken stock

1 Tbsp tomato puree
-
100g/3 1/2 oz button mushrooms

450g/1lb baby
potatoes,
halved

salt and black pepper
Serves 4
Method:

To make the patties, put the burger mix, egg and
water into a bowl, mix, and allow to stand for 15
minutes, or follow the instructions on the pack.
Form the mix into small patties with your hands.

Heat the oil in a frying pan and lightly brown the
patties on both sides. Set aside. Add the onion,
bell pepper, paprika, caraway seeds and flour and
fry for 2 to 3 minutes.

Add the tomatoes and mix
well. Add the stock, tomato paste, patties,
mushrooms and potatoes, and bring to a boil.

Simmer
for about 30 minutes. Season with salt and pepper to
taste. Serve hot.
Note:
Textured vegetable protein really comes into its own
when it is used in soups and stew. The result is
every bit as warming and filing as a meat dish.
