Ingredients

  • 25g/1oz soy margarine

  • 1 medium onion, sliced

  • 1 potato, peeled and chopped

  • 1/2 pumpkin, peeled, seeded and chopped

  • 2 1/4 cups/800ml/18fl oz water

  • scant cup/200ml/7fl oz soy milk

  • salt and white pepper

  • 4 Tbsp soy cream

  • some chives for garnishing

  • basil leaves for garnish

Serves 4


Method:

  1. Melt the margarine in a pan, add the onion, potato and pumpkin and fry for 2 minutes.

  2. Add the water and bring to a boil. Simmer for 30 minutes.

  3. Allow the liquid to cool slightly, then puree it in a food processor.

  4. Bring the liquid back to the pan and add the soy milk. Season with salt and pepper and reheat.

  5. Pour the soy cream over the soup and garnish with the chives.
