Creamed Carrot

Ingredients

25g/1oz soy margarine

1 medium onion, roughly chopped

1 celery
stick, roughly chopped

1 tomato,
roughly chopped

450g/1lb
carrots, peeled and chopped

3 cups/900ml
water
-
salt and
black pepper

1/2 cup/100ml
pouring soy cream
-
basil leaves
for garnish
Serves 4
Method:

Melt the margarine in a pan, then add the onion,
celery, tomato and carrots and fry for 3 minutes.

Add the water and bring to the boil. Simmer for 30
minutes.
Season with the salt and pepper.

Allow
the soup to cool slightly, then puree until smooth
in a blender or food processor.

Return the soup to the pan, add the cream and
reheat. Garnish with the basil leaves.
Note: This
simple, nourishing soup is best simply served with
fresh baked bread. It can be easily adjusted to make
a more filling mea, however. Try adding 225g/8oz of
macaroni or farfalle before cooking.
