Snacks and Side Dishes Recipes - Stir-Fried Tofu, Green Beans and Red Pepper in Black Bean Sauce Recipe

Ingredients

  • 150g/5oz green beans, cut into halves

  • 1 Tbsp sunflower oil

  • 2 cloves garlic, finely chopped

  • 1/2 in piece fresh ginger, chopped

  • 1 red pepper, diced into bite-size pieces

  • 300g/11oz firm tofu, diced Into bite-size pieces

  • 4 spring onions, chopped

  • 4 bok choy leaves, diced

  • 1 Tbsp shaoxlng rice wine, or dry sherry

  • 2 Tbsp black bean sauce

  • 1 Tbsp Chinese light soy sauce

  • 1 tsp sugar

Serves 4


Method:

  1. Blanch the green beans in a pan of water for 2 minutes, and drain.

  2. Heat the oil in a wok or frying pan, and stir-fry the garlic and ginger for 1 minute.

  3. Add the pepper, green beans, tofu, spring onions and bok choy leaves and stir-fry for 4 to 5 minutes.

  4. Add the rice wine, black bean sauce, soy sauce and sugar, then stir-fry for 2 more minutes.

  5. Serve with a bowl of short-grain rice.

Note: A classic Chinese dish, usually prepared with beef, but equally delicious in its vegetarian form.
