Stir-Fried Tofu,
Green Beans and Red Pepper in Black Bean Sauce

Ingredients

150g/5oz green beans, cut into halves

1 Tbsp sunflower oil

2 cloves garlic, finely chopped

1/2
in piece fresh
ginger, chopped

1 red pepper, diced into bite-size pieces
-
300g/11oz firm tofu, diced Into bite-size pieces

4 spring onions, chopped
-
4 bok choy leaves, diced
-
1 Tbsp shaoxlng rice wine, or dry sherry
-
2 Tbsp black bean sauce
-
1 Tbsp Chinese light soy sauce

1 tsp sugar
Serves 4
Method:

Blanch the green beans in a pan of water for 2
minutes, and drain.

Heat the oil in a wok or
frying pan, and stir-fry the garlic and ginger for 1
minute.

Add the pepper, green beans, tofu, spring
onions and bok choy leaves and stir-fry for 4 to 5
minutes.

Add the rice wine, black bean sauce, soy
sauce and sugar, then stir-fry for 2 more minutes.

Serve with a bowl of short-grain rice.
Note: A
classic Chinese dish, usually prepared with beef,
but equally delicious in its vegetarian form.
