Ingredients

  • 400g/14oz long grained rice

  • 1 Tbsp sunflower oil

  • 4 spring onions, chopped

  • 2 Chinese leaves, halved lengthways and shredded

  • 2 eggs, beaten

  • 175g/6oz sticky beans (natto)

  • 1 Tbsp Japanese soy sauce

Serves 4


Method:

  1. Cook the rice in accordance with instructions.

  2. Heat the oil in a frying pan, add the spring onions and bok choy leaves and stir-fry for 3 minutes.

  3. Make a well in the centre of the pan, add the egg and stir-fry.

  4. Add the rice, sticky beans and soy sauce, then stir­fry for 2 to 3 minutes. Serve hot.
