Stir-Fried Rice
with Soy Viennas and Mushrooms

Ingredients

400g/14oz long-grain rice, rinsed
-
100g/4oz frozen peas
-
1 Tbsp sunflower oil
-
6 soy Vienna sausages, sliced diagonally
-
1 medium onion, chopped
-
100g/4oz button mushrooms, sliced
-
4 Tbsp tomato ketchup
-
1 tsp Worcester sauce
-
salt and black pepper
-
chopped fresh parsley for
garnishing
Serves 4
Method:
-
Cook the rice. Boil the peas in a pan of water for 3 to 4
minutes, then drain.

Heat the oil in a frying pan,
add the onion, and stir-fry for 2 to 3 minutes.

Add
the soy Vienna sausages, mushrooms and peas and
stir-fry for about 5 more minutes.
-
Add the cooked
rice, tomato ketchup and Worcester sauce and
stir-fry again for 2 to 3 minutes. Season to taste,
garnish with parsley and serve.
