Snacks and Side Dishes Recipes - Stir-Fried Rice with Soy Viennas and Mushrooms Recipe

Ingredients

  • 400g/14oz long-grain rice, rinsed

  • 100g/4oz frozen peas

  • 1 Tbsp sunflower oil

  • 6 soy Vienna sausages, sliced diagonally

  • 1 medium onion, chopped

  • 100g/4oz button mushrooms, sliced

  • 4 Tbsp tomato ketchup

  • 1 tsp Worcester sauce

  • salt and black pepper

  • chopped fresh parsley for garnishing

Serves 4


Method:

  1. Cook the rice. Boil the peas in a pan of water for 3 to 4 minutes, then drain.

  2. Heat the oil in a frying pan, add the onion, and stir-fry for 2 to 3 minutes.

  3. Add the soy Vienna sausages, mushrooms and peas and stir-fry for about 5 more minutes.

  4. Add the cooked rice, tomato ketchup and Worcester sauce and stir-fry again for 2 to 3 minutes. Season to taste, garnish with parsley and serve.
