Steamed Eggplant
with Soy and Ginger Sauce

Ingredients
FOR THE SAUCE:

1 clove garlic, crushed

1 cumin piece fresh ginger,
grated fine

1 spring onion, chopped

3 Tbsp Chinese light soy sauce

2 Tbsp white wine
vinegar
-
1 Tbsp sugar
-
1 Tbsp sesame oil
-
1 fresh small red chili, chopped

1 spring onion
shredded, for garnish
Serves 4
Method:

Remove the top of the eggplant, halve
width ways and
then halve again lengthways. Cut the four pieces
into wedges.

Mix the garlic, ginger, spring onion,
soy sauce, vinegar, sugar, sesame oil and chili
pepper in a jar, and
shake
well.

In a large pan, boil a little water under a
steamer. Steam the eggplant for 15 minutes, making
sure the steamer doesn't boil dry. Garnish with
spring onion.
Note: This
is a low-calorie Chinese dish, the eggplant being
steamed rather that fried. It is good served either
hot or cold.
