Spicy Avocado and
Red Pepper Dip

Ingredients

1 large avocado, stoned and
chopped

1 tsp freshly squeezed lemon
juice

1 red pepper, finely chopped

1 spring onion, finely chopped

1/2
tsp ground coriander

1/4 tsp chili powder

2 Tbsp soy cream

salt and black pepper
Serves 4
Method:

Mash the
chopped
avocado in a bowl and sprinkle with the lemon juice.

Add the pepper, spring onion, coriander, ground
chili and soy cream, and mix well.

Season with
salt and pepper.
Note: The
chili and red pepper used in this recipe five a mild
taste. For those who enjoy a stronger flavor, adjust
accordingly.
