Ingredients

  • 1 large avocado, stoned and chopped

  • 1 tsp freshly squeezed lemon juice

  • 1 red pepper, finely chopped

  • 1 spring onion, finely chopped

  • 1/2 tsp ground coriander

  • 1/4 tsp chili powder

  • 2 Tbsp soy cream

  • salt and black pepper

Serves 4


Method:

  1. Mash the chopped avocado in a bowl and sprinkle with the lemon juice.

  2. Add the pepper, spring onion, coriander, ground chili and soy cream, and mix well.

  3. Season with salt and pepper.

Note: The chili and red pepper used in this recipe five a mild taste. For those who enjoy a stronger flavor, adjust accordingly.
