Spiced Stir-Fried
Tofu and Asparagus on Rice

Ingredients

400g/14oz
short-or long-grain
rice
-
250g/9oz asparagus,
trimmed and sliced in 3 pieces diagonally

200g/7oz baby corn, cut
in half diagonally

Tbsp sesame
oil
-
1 Tbsp sunflower oil
-
2 cloves garlic,
minced 1cmfhin ginger, minced
-
4
spring
onions, chopped
-
400g/14oz firm tofu,
diced into bite sized pieces

1 Tbsp shaoxing rice
wine or dry
sherry
-
2 Tbsp Chinese light
soy sauce
-
1 tsp chili bean
sauce
-
1 tsp
sugar
Serves 4
Method:
-
Cook the rice following the method.
Blanch the asparagus and baby sweetcorn in a pan of
boiling water for 3 to 4 minutes. Drain.

Heat the
sesame and sunflower oils in a wok or frying pan.
Add the garlic and ginger and stir-fry for 1 minute.

Add the spring onions, asparagus, baby corn and
tofu and stir-fry for 4 to 5 minutes.

Stir in the
rice wine, soy sauce, chili bean sauce and sugar
and stir-fry for 1 to 2 minutes. Serve hot on rice.
Note: An
easy-to-prepare and delicious dish that will satisfy
the healthiest appetizer. Chili bean sauce is a hot
red sauce made from soy beans, chilies and
seasoning.
