and Soy Bacon Rosti

750g/1lb 10oz
potatoes,
peeled

250g/9oz parsnip, peeled
-
50g/2oz soy bacon,
sliced
-
salt and black pepper
-
2 Tbsp soy margarine
-
1
Tbsp soy or vegetable
oil
Serves 4
Method:

Put the potatoes and parsnip in a pan of water.
Bring to a boil, cook for 1 minute and then drain.

Grate the potatoes and parsnip coarsely with a
grater or food processor. In a bowl, mix the
potatoes, parsnip and soy bacon well and sprinkle
with salt and pepper.

Warm 1 tablespoon of the
margarine with the oil in a flying pan and add the
potato mixture; cook for 5 minutes. Then press down
and cook over a low heat until the bottom is crisp.

Turn over the rosti, slip in the remainder of the
margarine, press down, and cook again for a few
minutes until crisp. Serve hot.
