Ingredients

  • 750g/1lb 10oz potatoes, peeled

  • 250g/9oz parsnip, peeled

  • 50g/2oz soy bacon, sliced

  • salt and black pepper

  • 2 Tbsp soy margarine

  • 1 Tbsp soy or vegetable oil

Serves 4


Method:

  1. Put the potatoes and parsnip in a pan of water. Bring to a boil, cook for 1 minute and then drain.

  2. Grate the potatoes and parsnip coarsely with a grater or food processor. In a bowl, mix the potatoes, parsnip and soy bacon well and sprinkle with salt and pepper.

  3. Warm 1 tablespoon of the margarine with the oil in a flying pan and add the potato mixture; cook for 5 minutes. Then press down and cook over a low heat until the bottom is crisp.

  4. Turn over the rosti, slip in the remainder of the margarine, press down, and cook again for a few minutes until crisp. Serve hot.
