Ingredients

  • 1/3 cucumber, cut in half lengthwise and sliced

  • 1 tomato, cut in quarters and sliced

  • 2 Tbsp fresh coriander, chopped

  • 1 tsp ground cumin

  • salt

  • 1/2 cup/130g/5oz soy yoghurt

  • a pinch of paprika

  • coriander leaves for garnishing

Serves 4


Method:

  1. Put the cucumber, tomato, coriander, ground cumin, salt and yoghurt in a bowl and mix well.

  2. Put the mixture in a serving bowl. Sprinkle with paprika and garnish with coriander.

Note: Prepared as an appetizer or a light snack, raita is delicious eaten with sticks of carrot and celery or with some naan bread.
