Cucumber and
Tomato Raita

Ingredients

cucumber, cut in half
lengthwise and sliced

tomato, cut in quarters and sliced

Tbsp fresh coriander, chopped

tsp ground cumin

salt

1/2
cup/130g/5oz soy yoghurt

a pinch of paprika

coriander leaves for garnishing
Serves 4
Method:

Put the cucumber, tomato, coriander, ground cumin,
salt and yoghurt in a bowl and mix well.

Put the
mixture in a serving bowl. Sprinkle with paprika and
garnish with coriander.
Note:
Prepared as an appetizer or a light snack, raita is
delicious eaten with sticks of carrot and celery or
with some naan bread.
