Beans with Carrot and Shiitake Mushrooms

Ingredients

300g/11oz cooked,
canned, or frozen soy beans, drained
-
300g/11oz
carrots, cut into halves lengthwise and sliced into 1cm/1/2-in pieces
-
75g/3oz fresh shiitake mushrooms, cut into halves
-
1 3/4 cups/300ml/1/2pt Japanese fish
or vegan stock
-
3 1/2 Tbsp sugar
-
3
Tbsp Japanese soy sauce
Serves 4
Method:
-
Put all the ingredients
in a pan, bring to a boil and simmer over a low
heat
for about 40 to 45 minutes.

Serve with a
side-dish of rice.
