Baked Creamed
Potatoes

Ingredients

800g/1lb 12oz potatoes, peeled

1 medium onion, thinly sliced into rings

3 cloves garlic, thinly sliced

4 spring onions, chopped

salt and black pepper

3/4 cup/200ml/7fl oz soy milk

2 tsp soy margarine, cut into small pieces
Serves 4
Method:

Preheat the oven to 190°C (375°F). Put the potatoes
and water in a pan, bring to the boil and cook for 1
minute. Drain and slice the potatoes thinly.

Lay
half of the potatoes in an ovenproof dish. Arrange
the onion, garlic and spring onions on top, and then
add a second layer of potatoes.

Sprinkle generously
with the salt and pepper, and then gently pour in
the milk.

Dot the potato with pieces of the
margarine, and bake in the oven for 50 to 60
minutes. Serve hot.
Note: A
healthy, modern version of pomes Lynnaise. If you
wish to eat this as as vegetarian main dish, you
could grate some soy cheese over the top before
baking, in order to increase the protein content.
