Ingredients

  • Medium cauliflower, cut into florets

  • Medium broccoli, cut into florets

  • Pinch of salt

For the white sauce:

  • 40g/1 1/2oz soy margarine

  • 40g/1 1/2oz plain flour

  • 1 3/4 cups/400ml/14fl oz soy milk

  • salt and black pepper

  • 2 Tbsp breadcrumbs

Serves 4


Method:

  1. Preheat the oven to 200°C (400°F). Cook the cauliflower and broccoli with a pinch of salt in boiling water for 3  minutes, then drain.

  2. Melt the margarine in a pan, add the flour and stir quickly. Add the milk a little at a time, stirring constantly until the sauce thickens. Season with salt and pepper to taste.

  3. Place the cauliflower and broccoli in an ovenproof dish, pour the white sauce over them and sprinkle with breadcrumbs.

  4. Bake in the oven for about 20 minutes or until golden brown. Serve hot.
