Ingredients

  • 400g/14oz long grained rice

  • 1 Tbsp sunflower oil

  • 1 clove garlic, minced

  • 1 shallot, chopped finely

  • 8 soy or tofu sausages

  • 1/2 red pepper, seeded and diced

  • 227g/8oz tinned pineapple, diced

For the Dressing:

  • 2 tsp whole-grain mustard

  • 1 Tbsp canned pineapple juice

  • 4 Tbsp sunflower oil

  • 1 Tbsp white wine vinegar

  • Salt and black pepper

Serves 4


Method:

  1. Cook the rice accordingly. Heat the oil in a frying pan, add the garlic, shallot, and sausages, and sauté for 4 to 5 minutes.

  2. Mix the mustard, pineapple juice, oil, vinegar, salt, and pepper in a jar and shake well.

  3. Combine the cooked rice, sausage, bell pepper, and pineapple in a bowl. Stir in the dressing, and mix well.

  4. Serve, garnished with the basil leaves.

Note: A modern salad with tasty soy sausages to convert even the most hardened soy sceptic.
