Soy Sausage
Pineapple and Rice Salad

Ingredients

400g/14oz long grained
rice

Tbsp
sunflower
oil

1 clove garlic, minced

1 shallot, chopped
finely
-
8 soy or tofu
sausages
-
1/2 red pepper, seeded
and diced

227g/8oz tinned pineapple, diced
For the Dressing:
-
2 tsp whole-grain mustard
-
1 Tbsp canned
pineapple juice
-
4
Tbsp
sunflower
oil
-
1 Tbsp
white wine vinegar
-
Salt and black pepper
Serves 4
Method:
-
Cook the rice accordingly. Heat the oil in
a frying pan, add the garlic, shallot, and sausages,
and sauté for 4 to 5 minutes.

Mix the mustard,
pineapple juice, oil, vinegar, salt, and pepper in a
jar and shake well.

Combine the cooked rice,
sausage, bell pepper, and pineapple in a bowl. Stir
in the dressing, and mix well.

Serve, garnished with
the basil leaves.
Note: A
modern salad with tasty soy sausages to convert even
the most hardened soy sceptic.
