Seafood Sticks and
Spring Onion Rafts with a Lemon and Miso Sauce

15 seafood sticks
For the Lemon and Miso Sauce:
Serves 4
Method:

Cut the spring onions to the same length as the
seafood sticks. Boil the spring onions in a pan of
water for 3 minutes. Drain, quickly rinse with cold
water, then squeeze off any excess water.

To
make the sauce, put the miso, mirin and sugar in a
pan over a low heat. Keep stirring for 1 to 2
minutes until the mixture is blended. Turn off
the heat, add the lemon zest and juice and mix well.

Place two seafood sticks on a plate, then lay the
spring onions over them crosswise. Repeat to create
another layer of seafood sticks and another layer of
spring onions to form the small "raft". Pour the
miso sauce over each
raft, and serve.
Note:
Simple ingredients combine to produce a really great
flavor for this dish, which can either be served as
an appetizer, or as a main course served with rice
and two extra surimi sticks on each "raft".
