- Rocket Seafood Stick and Avocado Salad with Soy

Ingredients

50g/2oz rocket, rinsed

10 seafood sticks, tear into strips

2 celery sticks, cut into long matchstick strips

1 large avocado, deseeded and chopped

2 medium cooked beetroot, cut into matchstick strips
For the Dressing:

4 Tbsp Japanese soy sauce

1 Tbsp brown sugar
-
1 Tbsp freshly squeezed lemon juice

2 Tbsp sushi vinegar
-
2 Tbsp Japanese fish or vegan stock
Serves 4
Method:

Put the rocket, seafood sticks and celery in a salad
bowl, and mix together.

Add the avocado and
beetroot.

In a jar, mix all the ingredients for
the dressing and
shake
well until the sugar is dissolved.

Sprinkle some.
dressing over and serve.
Note: If
you like to eat salads every day, as I do. You may
sometimes find oil-based dressing a little too heavy
for daily use. This dressing uses no oil, giving a
lighter, fresher result that accentuates the tastes
and textures of the salad.
