Peppers and Green Beans with Soy and Sesame Dressing

Ingredients

1 red pepper, halved and seeded

1 green pepper,
halved seeded

1 Tbsp sunflower oil
-
100g/4oz green beans, halved
-
50g/2oz lettuce
-
250g/9oz shelled prawns
-
6 seafood sticks, sliced diagonally
-
coriander leaves
For the Soy and Sesame Dressing:
-
2 Tbsp Japanese soy sauce
-
2 Tbsp sesame oil
-
2 Tbsp sunflower oil
-
1/2 clove garlic, finely chopped
-
2 tsp English
mustard
-
1 Tbsp toasted sesame seeds
-
2 Tbsp sushi vinegar
Serves 4
Method:

Brush the oil over the peppers, lay them on a
greased baking sheet, put under the grill and grill
them until blackened. Rub and peel off the scorched
skin and slice the peppers.

Cook the green beans
in a pan of boiling water for 3 to 4 minutes, and
drain.

Combine the peppers, green beans, lettuce
half the shrimp and seafood sticks in a salad bowl.

Arrange the rest of shrimp on top and garnish with a
few coriander leaves.

Mix the soy sauce, sesame
oil, sunflower oil, garlic, mustard, sesame seeds
and vinegar in a jar and shake well. Pour the
dressing over just before serving.
Note: Soy
sauce dressings are now available ready-make in many
supermarkets but homemade dressing is mush butter.
